Healthy Coconut Date Balls
Coconut Date Balls are a great healthy treat! They are made with shredded coconut, cashew butter, and dates. If you’re a fan of Raffaello Candy or other coconut treats then you will love these little bites.
I need these Coconut Date Balls more than ever on this rainy Wednesday! Not that I want to complain about the rain, it’s quite nice to have some cooler days but I’m so tired. I had to drink a second cup of cold brew coffee to get me going otherwise I would still be in bed.
Luckily, I had these energy bites in the fridge and am munching away while writing this post and drinking my coffee.
You guys know I love sweet treats like my Tropical Coconut Squares or Orange Creamsicle Cupcakes but sometimes you want to be not so naughty and skip the sugar for something healthier. These Coconut Date Balls are healthy and delish! No need to feel guilty for snacking on them.
They are made with cashew nuts, cashew butter, shredded coconut, honey, coconut oil, and dates – all things that are actually good for you! And they are really easy to make!
I’m going through them like they’re candy, so the easy to make part is very important to me!
If you’re using normal dates then you need to soak them for 30 minutes in warm water, discard the water and put them in your food processor. Medjool dates don’t need soaking and you can use them right away, just make sure they have no pit in them.
Add all the other ingredients and mix until everything is combined. Then you just need to roll them into balls, coat them with shredded coconut and you’re done.
They need to sit in the fridge for a few hours but you can speed that up by putting them into the freezer!
These little energy bites saved me many times when I had a craving for something sweet. They’re also great when you are in a hurry and need to get out the door but didn’t have breakfast yet. Just grab a few and you’re good to go!
They taste delicious and remind me of one of my favorite treats: Raffaello! But these Coconut Date Balls leave you much more satisfied!
Coconut Date Balls
- 1 cup dates
- 1 cup cashews
- 2 tbsp cashew butter
- 1 cup shredded coconut
- 2 tbsp honey
- 2 tbsp coconut oil
- 1 pinch of salt
- Soak dates in hot water for 30 minutes. Discard water and put dates into a food processor.
- Add all the other ingredients.
- Mix until well combined.
- Roll into balls and coat balls with more shredded coconut if desired.
- Store in an airtight container in the fridge. Or freeze for about 30 minutes to make them firm quicker before transferring balls to the fridge.
