And yes they are spicy! Not really spicy but the ground ginger and cinnamon give them a nice kick.

They are a little bit less sweet than your normal banana chocolate cookie but you can adjust the sweetness quite a bit with the ripeness of the bananas you use. If you make them with really ripe black bananas they are much sweeter than with greenish ones.

You guys definitely know that scenario when you bought bananas at the store and then you forget them or are not in the mood for bananas. These cookies or my Banana Bread with Maple-Walnut Topping are perfect for such occasions! In my opinion, baked goods like banana bread or anything with banana tastes much better with really ripe bananas.

Ingredients

  • 1/3 cup butter, softened
  • 1/2 cup sugar
  • 1 egg
  • 1/2 cup mashed ripe banana
  • 1/2 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp cornstarch
  • 1/4 tsp salt
  • 1/2 tsp ground ginger
  • 1/2 tsp cinnamon
  • 1/2 cup semisweet chocolate chips

Instructions

  • Prepare baking sheets with cooking spray and preheat the oven to 350°F. In a small bowl, cream butter and sugar until light and fluffy. Beat in the egg, the mashed banana and the vanilla extract.
  • Combine the flour, cornstarch, baking powder, salt, ground ginger and cinnamon. Add the dry ingredients gradually to the creamed mixture and mix well. Stir in the chocolate chips.
  • Drop 2 tablespoons per cookie 2 inch apart onto the prepared baking sheets.
  • Bake for 10-13 minutes or until the edges of the cookies are lightly browned. Transfer cookies to cooling racks after ten minutes.
