- 1/2 cup unsalted butter
- 1 tbsp crushed chai tea 2-3 tea bags
- 1 cup sugar
- 1 cup pumpkin puree
- 2 large eggs
- 1 1/2 cups all-purpose flour
- 1 1/4 tsp baking soda
- 1/2 tsp salt
- 1/2 cup chocolate chips
Preheat the oven to 350F (180C) and prepare a 12-cup muffin pan with cooking spray or paper liners.
Melt the butter with the crushed chai tea in a medium bowl in the microwave or use a small pan.
Combine the melted chai butter with the sugar, pumpkin puree, and eggs. Whisk until smooth.
Add the flour, baking soda, and salt. Whisk until just incorporated. Don't over mix but make sure that there are no flour pockets left in the batter.
Whisk in the chocolate chips.
Use an ice cream scoop to scoop the batter into the muffin cups.
Bake for 20-25 minutes or until a toothpick comes out clean.
Let cool for a few minutes in the pan then transfer the muffins to a cooling rack.
