Ingredients

  • 1/2 cup unsalted butter
  • 1 tbsp crushed chai tea 2-3 tea bags
  • 1 cup sugar
  • 1 cup pumpkin puree
  • 2 large eggs
  • 1 1/2 cups all-purpose flour
  • 1 1/4 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup chocolate chips

Instructions

  • Preheat the oven to 350F (180C) and prepare a 12-cup muffin pan with cooking spray or paper liners.
  • Melt the butter with the crushed chai tea in a medium bowl in the microwave or use a small pan.
  • Combine the melted chai butter with the sugar, pumpkin puree, and eggs. Whisk until smooth.
  • Add the flour, baking soda, and salt. Whisk until just incorporated. Don't over mix but make sure that there are no flour pockets left in the batter.
  • Whisk in the chocolate chips.
  • Use an ice cream scoop to scoop the batter into the muffin cups.
  • Bake for 20-25 minutes or until a toothpick comes out clean.
  • Let cool for a few minutes in the pan then transfer the muffins to a cooling rack.
