Coconut Date Balls

Coconut Date Balls are a great healthy treat! They are made with shredded coconut, cashew butter, and dates. If you're a fan of Raffaello Candy or other coconut treats then you will love these little bites.

  • 1 cup dates
  • 1 cup cashews
  • 2 tbsp cashew butter
  • 1 cup shredded coconut
  • 2 tbsp honey
  • 2 tbsp coconut oil
  • 1 pinch of salt


  • Soak dates in hot water for 30 minutes. Discard water and put dates into a food processor.
  • Add all the other ingredients.
  • Mix until well combined.
  • Roll into balls and coat balls with more shredded coconut if desired.
  • Store in an airtight container in the fridge. Or freeze for about 30 minutes to make them firm quicker before transferring balls to the fridge.
