Coconut Date Balls
Coconut Date Balls are a great healthy treat! They are made with shredded coconut, cashew butter, and dates. If you're a fan of Raffaello Candy or other coconut treats then you will love these little bites.

Servings: 20 balls
- 1 cup dates
- 1 cup cashews
- 2 tbsp cashew butter
- 1 cup shredded coconut
- 2 tbsp honey
- 2 tbsp coconut oil
- 1 pinch of salt
Soak dates in hot water for 30 minutes. Discard water and put dates into a food processor.
Add all the other ingredients.
Mix until well combined.
Roll into balls and coat balls with more shredded coconut if desired.
Store in an airtight container in the fridge. Or freeze for about 30 minutes to make them firm quicker before transferring balls to the fridge.
