Servings: 8
- 10 cups Brioche bread cubes
- 1/4 cup butter
- 2 cups leek thinly sliced
- 2 stalks celery thinly sliced
- 1 pound Italian sausage casing removed
- Salt and pepper
- 1 tbsp fresh sage minced
- 1 tbsp fresh thyme minced
- 2 Pink Lady apples unpeeled, cored and largely diced
- 1/2 cup sliced blanched almonds
- 2 cups chicken broth
Spread out the Brioche bread cubes on a baking sheet and dry in a 300°F oven, about 20 mins until crisp and golden. Set aside and let cool.
Heat butter in a large skillet over medium-high heat and add leek and celery. Cook while stirring frequently, until tender, about 4 minutes. Add Italian sausage and cook until browned, about 5 minutes. Crumble the sausage as it cooks. Season with salt and pepper, to taste.
Remove from heat. Stir in sage, thyme, apples, almonds, chicken broth, and bread cubes until well combined.
Grease your crockpot with cooking spray and pour in mixture. Cover and cook on low heat for 4 hours.
Serve immediately, garnished with thyme, if desired.
