Ingredients

  • 10 cups Brioche bread cubes
  • 1/4 cup butter
  • 2 cups leek thinly sliced
  • 2 stalks celery thinly sliced
  • 1 pound Italian sausage casing removed
  • Salt and pepper
  • 1 tbsp fresh sage minced
  • 1 tbsp fresh thyme minced
  • 2 Pink Lady apples unpeeled, cored and largely diced
  • 1/2 cup sliced blanched almonds
  • 2 cups chicken broth

Instructions

  • Spread out the Brioche bread cubes on a baking sheet and dry in a 300°F oven, about 20 mins until crisp and golden. Set aside and let cool.
  • Heat butter in a large skillet over medium-high heat and add leek and celery. Cook while stirring frequently, until tender, about 4 minutes. Add Italian sausage and cook until browned, about 5 minutes. Crumble the sausage as it cooks. Season with salt and pepper, to taste.
  • Remove from heat. Stir in sage, thyme, apples, almonds, chicken broth, and bread cubes until well combined.
  • Grease your crockpot with cooking spray and pour in mixture. Cover and cook on low heat for 4 hours.
  • Serve immediately, garnished with thyme, if desired.
