Banana Blueberry Muffins

Ingredients

  • 3 large ripe bananas
  • 1/2 cup brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/3 cup unsalted butter melted
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp ground cinnamon
  • 1/2 tsp salt
  • 1/2 cup quick cooking oats
  • 1 cup blueberries fresh or frozen

Instructions

  • Preheat oven to 375°F and line a 12-count muffin pan with paper liners.
  • Mash bananas in a large mixing bowl.
  • Add sugar, egg, and vanilla extract and stir with a spatula until combined.
  • Add melted butter.
  • Combine flour, baking powder, baking soda, cinnamon, salt, and oats. Gently stir into wet ingredients. Don't overmix!
  • Fold in blueberries.
  • Divide batter between 12 muffin cups.
  • Bake for 20 to 25 minutes or until a toothpick inserted in the center comes out clean.
