Sparkling Berry Champagne Cocktail

Ingredients

For the Raspberry Simple Syrup:

  • 1 cup water
  • 1 cup granulated sugar
  • 1 1/2 cup frozen raspberries

For the Sparkling Berry Champagne Cocktail:

  • 1 1/2 cups vodka
  • 1 1/2 cups raspberry simple syrup
  • 1 750 ml bottle champagne

To garnish:

  • 1 cup fresh berries e.g., raspberries, blackberries
  • 1/4 cup fresh mint leaves

Instructions

  • Combine water and sugar in a small saucepan. Bring to a boil, stirring occasionally until sugar is dissolved, about 3-5 minutes.
  • Stir in frozen raspberries and return to a boil. Remove from heat and mash mixture using a fork.
  • Drain mixture through a fine mesh strainer, pressing raspberry pulp with a spatula to extract as much liquid as possible. Discard solids and refrigerate syrup until cooled.
  • In a pitcher, mix vodka and raspberry simple syrup. Distribute mixture between six glasses. Fill glasses with champagne.
  • Serve immediately, garnished with fresh berries and mint leaves.
