This Sparkling Berry Champagne Cocktail is the perfect drink for special occasions! Bubbly, festive, and so pretty, this easy cocktail is perfect for bridal showers and other celebrations.

This pretty champagne cocktail is my go-to drink for holiday parties or girlie celebrations with its gorgeous pinkish red color. Made with homemade raspberry simple syrup, your favorite champagne or sparkling wine, and garnished with berries, this drink is sure to be a crowd-pleaser.

It’s also an easy drink where many steps can be prepared in advance. The simple syrup can be made a few days before the party and I also like to prep the glasses ahead of time with the vodka raspberry mix at the bottom of the champagne flutes.

Then when you’re ready to serve top the glasses with champagne and add fresh berries, mint leaves, and fun paper straws. This way the champagne will stay bubbly and the garnish will stay fresh.

HOW TO MAKE THIS SPARKLING BERRY CHAMPAGNE COCKTAIL

To make this sparkling champagne cocktail you need champagne flutes or other glasses (these pretty no-break stemless flutes are on my wishlist). You also need fresh AND frozen berries to make this drink.

The frozen berries are for the simple syrup, the frozen ones are harvested when they’re perfectly ripe and have more flavor. I make my simple syrup the day before so it can cool down completely in the fridge and I have one step less to do on the day of the party.

To assemble the drinks, mix vodka and raspberry simple syrup together, then distribute it between the glasses and top with champagne. This way the champagne doesn’t get flat and stays fizzy. Make sure that all your ingredients are really cold so that the drinks stay chilled longer and you don’t need to dilute the flavor of the champagne with melted ice cubes.

Sparkling Berry Champagne Cocktail

This Sparkling Berry Champagne Cocktail is the perfect drink for special occasions! Bubbly, festive, and so pretty, this easy cocktail is perfect for bridal showers and other celebrations.

Ingredients 

For the Raspberry Simple Syrup:

  • 1 cup water
  • 1 cup granulated sugar
  • 1 1/2 cup frozen raspberries

For the Sparkling Berry Champagne Cocktail:

  • 1 1/2 cups vodka
  • 1 1/2 cups raspberry simple syrup
  • 1 750 ml bottle champagne

To garnish:

  • 1 cup fresh berries, e.g., raspberries, blackberries
  • 1/4 cup fresh mint leaves

Instructions 

  • Combine water and sugar in a small saucepan. Bring to a boil, stirring occasionally until sugar is dissolved, about 3-5 minutes.
  • Stir in frozen raspberries and return to a boil. Remove from heat and mash mixture using a fork.
  • Drain mixture through a fine mesh strainer, pressing raspberry pulp with a spatula to extract as much liquid as possible. Discard solids and refrigerate syrup until cooled.
  • In a pitcher, mix vodka and raspberry simple syrup. Distribute mixture between six glasses. Fill glasses with champagne.
  • Serve immediately, garnished with fresh berries and mint leaves.
