Coconut Water Smoothie is packed with raspberries, baby spinach, chia, and mango! Loaded with fruits, veggies, and coconut water, this drink is healthy and delicious!
Today I’m craving something healthy for breakfast!
It’s raining today like crazy and it’s cold outside. I just went into our underground parking garage to look after our car because I get quite paranoid if it’s raining so much. And I got SO wet on the short walk back to the door! Strange weather.
To make everything better I made myself a yummy green but not green-tasting smoothie!
I think I have a spinach obsession at the moment. Last week I made Spinach Tomato Quiche and the week before Spinach & Ricotta Puff Pastry Parcels. This week it’s time for something sweet with spinach!
I’m not a huge fan of green smoothies that taste like green, earthy veggies. I love everything sweet, so today’s smoothie is green but really delicious! And the bonus is, that it’s really good for you.
And it looks pretty, too! Don’t be tempted to throw all the ingredients together (do it if you’re lazy and drink this in the dark, you will be fine). First, make the green smoothie than make the raspberry one. If you don’t do this in two steps it won’t look pretty. It will taste delicious, but I won’t look delicious.
The coconut water is perfect to rehydrate in the morning! I really love the taste of it and it’s a great healthier alternative to soda or juice.
At the moment, I’m trying to make healthier choices and eat more fruits and especially veggies. Smoothies are a great way to get more greens. I added two packed cups of baby spinach leaves into my Coconut Water Smoothie and 4 cups of fruit. That made 3 big mason ball tumblers full of green deliciousness.
I would say that is a pretty good start into the day!
And this smoothie will also keep you full for a few hours! Because of the bananas and the chia seed you won’t need any milk to make your smoothie creamy. The banana gives it a smooth texture and the chia seeds will absorb a bit of the liquid and expand. A great way to reduce your dairy-consume without losing flavor!
I much prefer smoothies over juices! They’re much quicker to make, my mixer is easier to clean and I feel like I’m much longer full. I use my Thermomix to get a silky smooth texture but every high powered mixer like a Vitamix will do the job.
You only need 10 minutes to make this delicious smoothie and cleaning your mixer is included in that time!
