    Chicken Mushroom Pasta

    Chicken Mushroom Pasta is an easy weeknight meal that is ready in less than 30 minutes! A delicious, super creamy white wine based sauce loaded with mushrooms and tender, perfectly seared chicken.

    We love easy weeknight dinners that can be made quickly and taste amazing like Healthy General Tso’s Chicken, Baked Chicken Legs with Potatoes, and Instant Pot Chili.

    Creamy Mushroom Chicken Pasta is one of our favorite meals because it’s so easy and quick to make from scratch.  Simple ingredients make this dish a budget-friendly weeknight dinner but it also makes a delicious meal for date nights. White wine gives the sauce a flavor kick and heavy cream makes it rich, creamy, and comforting.

    I probably love to cook with wine as much as I like to drink it! Wine adds so much flavor and the alcohol evaporates during cooking. You only need half a cup of white wine for the sauce so there is plenty leftover for you to enjoy with your dinner. The white wine sauce is so creamy and flavorful, you won’t regret adding a little bit of your favorite white wine.

    This easy chicken in white wine sauce with mushrooms will sure become a family favorite! Serve it over a bed of freshly cooked pasta for easily one of the tastiest meals you’ll ever make.

    Tips for making Chicken and Mushroom Pasta

    • If you don’t like or can’t consume white wine you can use more chicken stock instead.
    • Choose a large heavy skillet that is the right size for the amount of chicken you have. The skillet shouldn’t be too small because we want the chicken to brown and not steam.
    • Give the chicken a good sear! This adds a lot of flavor. Taking the chicken out of the pan and adding it back later keeps it from getting overcooked and dry.
    • Fresh mushrooms work best for this recipe! They hold their shape and add some nice texture and color to the sauce.
    • To clean the mushrooms you can give them a shower, but don’t let them soak. It’s totally ok (and much easier) to wash them and the amount of water they absorb is totally negligible. Pat them dry after washing and you’re good to go!
    • To save time you can also buy fresh pre-sliced mushrooms at the grocery store.
    • Instead of heavy cream, you can also use half-and-half in this recipe.
    • Instead of adding cornstarch and water you can also add a bit of pasta water to the sauce. The water contains starch from the pasta.
    • Spinach would make a great addition to the sauce! To make chicken mushroom spinach pasta just add a few handfuls of spinach to the sauce when you add back the chicken.
    • This chicken mushroom white wine sauce for pasta would also taste great with rice. I also often serve it straight up with rustic bread – so easy but so delicious!

    Tools used for making this Creamy Mushroom Chicken Pasta

    Pan: A heavy stainless steel skillet like this one works best for this recipe! You can also use a cast iron skillet, this is the one I use and love, it’s super affordable and so versatile.
    Chicken Stock: I always use this chicken stock when I only need a small amount. It’s also great for seasoning sauces or soups and you can make it as strong as you want. When I need a larger amount I usually use this concentrated chicken stock, it saves so much pantry space and 1 tub make 3 ½ cups broth.

    Ingredients

    Cups - Metric
    • 1 lb pasta
    • 2-3 boneless chicken breasts, thinly sliced
    • ½ cup white onion, chopped
    • 3 cups sliced mushrooms, (8 oz)
    • 1 Tbsp unsalted butter
    • 2 Tbsp olive oil, divided
    • salt
    • pepper
    • ½ cup white wine
    • ½ cup chicken stock, or more
    • ½ cup heavy cream
    • 1 tsp corn starch
    • 1 Tbsp water
    • 1 Tbsp chopped fresh or frozen parsley

    Instructions

    • Cook the pasta according to the package instructions until it is al dente. Reserve about ½ cup of pasta water, then drain the pasta and set it aside.
    • In a large skillet heat 1 tbsp oil and 1 tbsp butter together at medium-high temperature. Season the thinly sliced chicken with salt and pepper. When the pan is hot and the butter melted fry the chicken until browned and cooked through about 2 minutes on each side. Take cooked chicken out of the pan and set aside.
    • In the same pan add 1 tbsp oil and cook the onion until lightly browned, about 2-3 minutes. Add the sliced mushrooms and cook until tender, about 2 minutes.
    • Add white wine to the pan and let simmer until reduced by half.
    • Add chicken stock and cream. In a small bowl combine cornstarch and water. Stir until starch is completely dissolved, take the pan off the heat then add to the sauce. Bring to a boil and let simmer without a lid at high heat for about 2-3 minutes to reduce and thicken.
    • Add the cooked chicken back to the pan and cook for 30 more seconds.
    • Add pasta water if needed. Stir in parsley and season to taste with salt and pepper.
    • Serve over pasta.

    Notes

    • If you like you can also add one finely minced garlic clove to the pan 
    • Keep some pasta water to thin out the sauce if it is too thick. I always add about ½ cup depending on the pasta I use.
    • This recipe makes the perfect amount of sauce for 1 lb of uncooked pasta. I don't recommend doubling the recipe if you want more sauce but you can add more cream to the sauce or use pasta water.

      If you dont want to use the white wine how much water and chicken stock would you use?

        Just replace the 1/2 cup of wine with another 1/2 cup of chicken stock.

      Just made this and it was really good, though there was not nearly enough sauce. I didn’t have an onion (sadly), but added garlic. Also didn’t use wine but did substitute more chicken stock as it says. I really wish I would have doubled the sauce recipe. I also used brown rice instead of pasta. Flavor was super good. I will make it again just add more for the sauce.

      How much pasta would be appropriate for the amount of sauce in the recipe?

      Hands down one of my fav meals. I’ve made this once a week for 8 weeks and it lasts me 4 days so I’m actually eating this dish quite a lot 😂😂 I throw massive handfuls of fresh spinach and it tops it off.

      I made this as described ; did not add spinach. I served it over fettuccini. It came together nicely but took quite a bit longer prepping ingredients and cooking the chicken ; I had 3 large chicken breasts. My main comment is that it was very bland.
      Maybe needs garlic? Maybe parmesan ? Not sure. I added plenty of salt and pepper.

        Sorry for the late reply, Dalyn! I always recommend using wine that you would also drink so I’m not the biggest fan of cooking wine but if that is all you have, I recommend using about half of the amount called for in the recipe and adjust the seasoning because cooking wine often has added salt.

        Vary good recipe, I added some extras though, doubled the sauce, added garlic, spinach, cream cheese, bacon bits and did it in my Dutch oven so I added the pasta to it topped it off with Parmesan and baked it, put fresh diced tomatoes on top once plated, my husband loved it
